Rose hip parfait

Rose hip parfait

Ingredients:

  • 2 very fresh eggs, 50ml (50 g) granulated sugar, 1 jar (300 g) Kecskeméti Rose-hip jam (strawberry or raspberry jam is just as good), 300ml whipping cream 
  • to serve: whipping cream, Kecskeméti Elderberry jam, mint leaf or lemon grass

1. Whisk the eggs and the sugar in a bowl with an electric beater until you get a thick, creamy mass. This will take around 4-5 minutes. Continue whisking while adding the jam by the spoonful.

2. Beat a thick foam from the well-chilled cream, then fold it carefully into the jam-egg mass. Spoon it into a bowl and freeze it.

3. When serving, dip a tablespoon into hot water to shape the parfait into oblong or round scoops, and place them on plates.

4. Top it with whipped cream, pour over thinned elderberry jam and decorate with a mint leaf.
