Caraway seed soup
Ingredients:
- 1/2 tsp caraway seed,
- 4 tbsp oil,
- 1 tbsp flour,
- 1 level tsp fine ground red paprika,
- slightly less than 1 level tbsp salt,
- 1 tsp Univer mild Piros Arany,
- 1 small onion
- 1 egg
1. Heat oil in a pan and braise the caraway seeds in it for about a minute – the soup will be even more tasty if the seeds are chopped beforehand. You know they’re good when they start audibly popping.
2. Then pull off the heat, sprinkle the flour on and mix quickly to prevent from burning – it should be a nice light brown. Add some red paprika powder and immediately pour 1-1.2 litres cold water into the pan, then add some Piros Arany for more flavour.
3. Keep stirring until it boils, place the whole peeled onion into the soup in whole, and then cook for 10 minutes.
4. Remove the onion before serving and after shutting off the heat mix in one beaten egg; alternatively, serve with croutons.
