Spicy BBQ roast
Ingredients for 4 people:
- 8 slices of boneless pork neck about 10 dkg each,
- 1 teaspoon salt,
- 1/2 tsp of ground black pepper,
- 1 tbsp Univer spicy Red Gold,
- 2 tablespoons of Univer mustard,
- 3 cloves garlic or 1 teaspoon Univer Garlic Paste,
- 4 tablespoons of oil,
- 1 large onion,
- 5 juniper berries
Preparation:
Slightly tenderize meat and make cuts on sides of meat to prevent shrinkage.
Mix the oil with salt, pepper, Red Gold, mustard and the crushed garlic or Garlic Paste. Rub meat slices thoroughly with mixture.
Peel onion, slice it up and separate to rings, mix it with the juniper berries squeezed with the flat side of a cleaver, then put layers of meat with mixture packed in tin foil. Let it rest in the refrigerator overnight.
When the BBQ grill is hot enough and the charcoal is glowing under it, place the meat slices onto the grill and roast both sides for approx. 4 minutes. For with pickles and soft bread.
