American meatloaf

Ingredients:

3 slices slightly dry white toast bread (or 100g breadcrumbs), 100ml milk, 650g minced beef from a fatter cut, 250g minced pork from a fatter cut, 1 small, grated onion or 1 tsp Univer onion paste, 2 pressed garlic cloves or 1/2 tsp Univer garlic paste, 1 large egg, 150ml Univer ketchup, 1.5 tsp salt, 1/2 tsp ground black pepper

1. Crumble the bread slices in a food processor to get fine breadcrumbs. Pour over the milk in a bowl, mix and set aside for 10 mins.

2. Then mix in the two minces, the onion, garlic, egg and 50ml ketchup, add salt and pepper.

3. Line a large baking tray with tinfoil or baking paper. Heap the meat mass on the tray, then shape a loaf of approx. 22 x 10-12 x 5.5 cm. Cook in a pre-heated oven at medium heat (175 °C; or 160 °C in a fan-assisted oven) for 50-55 minutes. While in the oven, brush 2-3 times with the remaining ketchup. Let it rest for 10 mins before serving, then cut into thick slices. Serve with mashed potatoes.
